For those who love potato curry, this time I'd like to share a recipe for coconut milk potato curry cooked with a nice thick gravy.

Ingredients

  • 1 onion
  • 3 cloves garlic (finely sliced)
  • 2 tablespoons olive oil
  • 1/2 teaspoon chili powder
  • 1 teaspoon turmeric powder

  • 6 potatoes
  • 1 can coconut milk
  • 1/2 teaspoon salt
  • A little coriander

Step-by-step instructions

1. Peel the onion and slice it finely. Peel the potatoes and cut them into medium-sized pieces.

2. Heat a pot and add the olive oil. Once the oil is hot, add the onions and stir for about 3 to 4 minutes.

3. Next, add the garlic along with chili powder, turmeric powder, salt, and any other seasonings you like, and stir for about 1 minute.

4. Then add the coconut milk. After stirring until well combined, add the potato pieces. Lower the heat to the minimum setting, cover with a lid, and simmer for about 30 minutes.

5. Once the time is up, the potato curry gravy will have thickened nicely and the potatoes will be tender.

Taste it for saltiness and blandness, and add more salt and seasonings if needed.

If the gravy is too thick, you can add a little water; if the gravy is still too watery, you can open the lid and simmer for a few more minutes.

Just before taking it off the stove, you can add a little more coriander.
