If you're hungry in the afternoon but don't feel like eating rice, and want to make a snack instead, let's try making this Chinese style cucumber pancake introduced below.

Ingredients

  • 2 eggs
  • 125 grams flour
  • 1 teaspoon salt
  • 1 teaspoon seasoning powder
  • 3 stalks spring onion (thinly sliced)
  • 1 viss cucumber
  • 1 teaspoon sesame oil
  • Half tablespoon cooking oil

Ingredients needed to make the dipping sauce

  • 1 clove garlic (crushed flat)
  • 2 teaspoons dark vinegar
  • 1 teaspoon salt
  • 2 teaspoons sesame oil

Step by step method

1. Grate the cucumber into long thin strips using a grater. Put the resulting cucumber strips into a large bowl.

2. Thinly slice the spring onion and add it to the bowl with the cucumber. Crack in the 2 eggs. Add the sesame oil, salt, and seasoning powder, then mix well until evenly combined.

3. Add the flour and mix well again until evenly combined. Then let it sit for about 15 minutes.

While waiting for 15 minutes, prepare the dipping sauce to be enjoyed with the pancakes once they're fried.

In a bowl, combine the crushed garlic, dark vinegar, salt, and sesame oil, and mix well until evenly combined.

4. Heat up a pan and coat the surface with oil. Once the oil is hot, scoop about one spoonful of the cucumber-flour batter and pour it into the pan to fry. After frying for about 2 minutes, flip it over to the other side and continue frying. After another 2 minutes of frying, you'll have a delicious hot cucumber pancake.

Continue frying the remaining batter in the same way.
