This time, let's cook a simple and nutritious kimchi tofu stir-fry.

Ingredients

  • 2 cups of kimchi
  • 200 grams of thinly sliced pork
  • 1/2 of an onion
  • 2 stalks of spring onion
  • 1 teaspoon of finely sliced ginger
  • 1 tablespoon of fish sauce
  • 1 tablespoon of garlic
  • 1 tablespoon of sugar
  • 1 tablespoon of sesame oil
  • 2 to 3 tablespoons of Korean chili paste
  • 1 teaspoon of sesame seeds
  • A little black pepper
  • 2 large blocks of tofu

Method

Cut the kimchi and pork into small pieces. Thinly slice the onion and spring onion. In a bowl, mix the kimchi, pork, and spring onion together, and knead them well. Let it sit for about 15 minutes.

Pour 4 cups of water into a pot and bring it to a boil. Add the 2 large blocks of tofu and boil them. Reduce the heat to medium and let it boil for about 5 minutes. Carefully remove the tofu, making sure it doesn't break apart. Cut it into small pieces about half an inch in size, being careful as you slice.

Heat a pan over medium heat.

Add the kimchi and pork, and stir-fry them. The kimchi will soften and the pork will cook through. After about 5 to 6 minutes, the liquid will evaporate.

Pour the kimchi and pork mixture over the tofu pieces, and it's ready to serve.

Alternatively, you can fry the tofu pieces in oil and serve them alongside as well.
