Hello everyone! It seems there's no dish as delicious as chicken cooked together with potatoes. And if you cook it with coconut milk as well, it becomes incredibly delicious with a rich, deep flavor. So let's learn how to cook a tasty Chicken Coconut Milk Potato Curry in just a few minutes.
Ingredients
- 4 pieces of boneless chicken thigh/leg meat
- 1 onion (thinly sliced)
- 1 potato
- 5 cloves of garlic
- 1 can of Ready Mate coconut milk
- 2 tablespoons of curry powder (mix turmeric powder, chili powder, and cumin powder in equal amounts)
- 4 tablespoons of olive oil
- A little salt
Step-by-step instructions
1. Peel the potato and cut it into medium-sized pieces. Thinly slice the onion and garlic as well, and cut the chicken into cube-shaped pieces.
2. Heat a pot and add 2 tablespoons of oil. Once the oil is hot, add the curry powder and stir. Then pour the coconut milk into the pot and let it simmer.
3. While the coconut milk is simmering, add the remaining 2 tablespoons of oil to another pot, add the onion and garlic, and sauté until fragrant. Once the onions have softened, add the chicken pieces and stir. When the chicken is partially cooked, add the potato pieces and mix together.
4. After adding the potatoes, stir for about 2 to 3 minutes, then pour the chicken, potatoes, and onions into the pot with the simmering coconut milk. Increase the heat slightly and let the coconut milk come to a boil. Once it's boiling, reduce the heat to the lowest setting, cover with a lid, and let it simmer for about 30 minutes.
Once the 30 minutes are up, you'll have a bowl of tender and delicious Chicken Coconut Milk Potato Curry ready to enjoy.
