Ingredients

  • 3 tablespoons olive oil
  • 2 cloves garlic (thinly sliced)
  • About 3 slices of red snapper fillet (cut into small cubes)
  • 1 stalk leek (thinly sliced)
  • 1 red or yellow bell pepper (seeds and core removed, thinly sliced)

  • About 1.5 lbs cod fish (bones and skin removed, cut into medium-sized pieces)
  • 125 grams tomatoes
  • 125 milliliters white wine
  • 375 milliliters chicken stock
  • 3 tablespoons coriander/cilantro, a little salt and ground pepper

Step-by-step instructions

1. Heat a pot, add the olive oil, garlic, red snapper, leek, and bell pepper, and stir-fry for about 4 minutes.

2. Add the tomatoes and white wine, and cook for about 3 minutes.

3. Then add the chicken stock and simmer on low heat for about 20 minutes. Cover the pot with a lid and let it simmer until it comes to a boil.

4. Once it's boiling, add the cod fish and let it simmer for about 5 minutes.

5. Once the fish is cooked, add salt and ground pepper, then taste and adjust for a light, slightly salty flavor.

Once the spiciness and seasoning are just right, remove it from the stove, and just before eating, add the coriander. Now you can enjoy it to your heart's content with its wonderful fragrance and flavor.
