Hello everyone! This time, I want to share a recipe for winter melon curry, which is quite familiar to Myanmar people. For those who can't eat spicy food, or don't like spicy food, if you just want to eat the sweet version, you can simply leave out the Korean chili flakes ingredient.

Ingredients

  • 14 oz unripe winter melon
  • 4 tablespoons Korean chili flakes
  • 2 tablespoons fish sauce
  • 2 tablespoons sugar
  • 1 shallot (thinly sliced)

  • 2 cloves garlic (thinly sliced)
  • 1 knob ginger, about an inch in diameter (thinly sliced)
  • 1 tablespoon oil
  • 2 tablespoons thinly sliced spring onion
  • 4 tablespoons water

Step-by-step Instructions

1. Wash the winter melon, remove the hard core, and cut into bite-sized pieces.

Then, using a fork, scrape the flesh of the winter melon. Then pour it into a plate.

2. In a small bowl, mix together the chili flakes, fish sauce, sugar, shallot, garlic, and ginger, stirring until well combined. Pour the resulting chili sauce over the winter melon and mix well.

3. Heat a pot and add 1 tablespoon of oil. When the oil is hot, add the spring onion and sauté for about 2 minutes. Then pour in all of the winter melon and the chili sauce. Add the additional 4 tablespoons of water.

4. Then, cook over medium heat for about 7 to 10 minutes.

Once the time is up, you'll have a delicious, slightly spicy winter melon curry ready to enjoy.

You can also sprinkle in some crushed peanuts, or squeeze in a little lime juice.
