For those who love a delicious, hot bowl of soup, this time I'd like to share a recipe for a flavorful and complete egg drop soup.

Ingredients

  • 2 liters of chicken stock (or vegetable stock)
  • 3 to 4 chicken eggs
  • 4 tablespoons of corn kernels
  • 4 tablespoons of carrot, cut into small cubes
  • 2 1/2 tablespoons of cornstarch (mixed with 2 tablespoons of water to make a cornstarch slurry)

  • 2 cloves of garlic (smashed) and 2 stalks of spring onion (thinly sliced)
  • A small amount of sliced ginger
  • 2 teaspoons of cooking oil and 1/2 teaspoon of sesame oil
  • 1/2 teaspoon of sugar and a small amount of white pepper powder
  • A small amount of salt

Step-by-step instructions

1. Crack the eggs into a bowl or cup and beat them well.

2. Heat a pot and add oil. Add the sliced ginger and garlic, and sauté for about 1 minute to infuse the oil with flavor. Once done, remove the garlic and ginger.

3. Next, pour the chicken stock into the pot. Add the carrots, sugar, and white pepper powder, and bring to a boil.

4. Once the soup is boiling, add the cornstarch slurry and stir until well combined.

5. Once the broth has thickened slightly, add about half of the beaten eggs and let it sit for about 30 seconds. Then pour in the remaining eggs.

After that, stir the eggs in one direction only.

6. As the next step, add the corn kernels and sesame oil. Taste and adjust for saltiness, then add a small amount of salt as needed.

Once everything is done, you'll have a delicious egg drop soup ready. Garnish with a little spring onion for a beautiful presentation, and enjoy it while it's tasty.
