Hello everyone! This time, I'd like to share a recipe for a fried egg roll wrapped with glass noodles, carrots, and a variety of other seasonings.

Ingredients

  • 1 packet of glass noodles
  • 3 eggs
  • 1 small carrot
  • 3 and 1/3 shallots
  • 1 stalk of coriander

  • 1 chili pepper
  • 3/4 tablespoon of fish sauce
  • 3/4 tablespoon of sesame oil
  • 1 teaspoon each of salt and sugar

Step-by-step Instructions

1. Fill a pot with water and bring it to a boil. Then add the glass noodles and boil for about 7 minutes.

2. Finely slice the shallots. Cut the carrot into small square pieces. Thinly slice the coriander stalk. Also thinly slice the chili pepper into rings. Then put the shallots, carrot, coriander, and chili pepper into a large bowl.

3. Once the glass noodles are done boiling, drain them and rinse with cold water. Then cut the glass noodles into small pieces using scissors.

Add the cut glass noodles into the large bowl from earlier. Crack in 3 eggs and mix well until combined.

4. Then add fish sauce, sesame oil, sugar, and salt into the egg bowl and mix again until well combined.

5. Heat a frying pan and add a little oil. Once the oil is hot, scoop about 2 tablespoons of the egg mixture and pour it into the pan. After about 20-30 seconds, fold the egg in half and roll it up. Then flip it to the other side and fry until fully cooked.

Once both halves are fully cooked, transfer them onto a plate.

Once everything is fried, you'll have a delicious egg roll ready to enjoy. If you want to make a bigger size, scoop about 1 large ladle of the mixed egg mixture and fry it the same way.
