Ingredients
- 5 eggs
- 8 oz pork (or chicken), finely sliced
- 2 tablespoons cooking wine
- 2 tablespoons light soy sauce

- A pinch of ground pepper
- 2 tablespoons water and a small amount of oil
- 2 stalks of finely chopped spring onion
- 1 tablespoon finely chopped ginger and 1 slice of ginger
- A round, large non-stick frying pan and a brush
Step-by-step instructions
1. Put the 5 eggs into a large mixing bowl, add a little salt, and whisk well for about 2 minutes.
2. In another bowl, add the finely sliced pork, cooking wine, light soy sauce, sesame oil, ground pepper, water, spring onion, and finely chopped ginger, then mix well for about 3 minutes until evenly combined.
3. In a small bowl, add a little oil. Keep the bowl of oil, the egg bowl, the meat bowl, and the brush ready near the stove.
4. Next, set the stove to medium heat and place the frying pan on the stove to heat it up.
5. To prevent the pan from sticking when frying the egg, rub the pan with the slice of ginger for about 2 minutes.
6. Once you've finished rubbing it with the ginger slice, dip the brush in oil and brush the surface of the pan.
7. Then pour 1 tablespoon of the egg mixture into the pan and swirl the pan in a circular motion.
8. While the egg is still partially cooked, add 1 teaspoon of the pork mixture.
9. Then, using a spatula, fold the egg in half like a half-moon shape. Press the edges of the egg gently with the spatula.
10. Following the steps above, fry until all the egg mixture and pork filling are used up.
