Ingredients

  • 7 oz enoki mushrooms (washed and the root ends trimmed off)
  • 1 carrot (thinly sliced)
  • 1/2 onion (thinly sliced)
  • 1 stalk spring onion
  • 1 tablespoon sesame oil

  • Salt and ground pepper, to taste
  • 3 tablespoons corn flour
  • 2 tablespoons wheat flour
  • 4 tablespoons cold water
  • 1/2 tablespoon garlic powder

Ingredients needed for the sauce

  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1/2 tablespoon chili powder

Step-by-step Instructions

1. Thinly slice the enoki mushrooms. Then place them in a large mixing bowl along with the carrot, onion, spring onion, sesame oil, salt, and ground pepper, and mix well until evenly combined.

2. In a small bowl, mix the corn flour, wheat flour, water, and garlic powder together until well combined. Then add this to the bowl of enoki mushrooms and knead until the batter and vegetables are evenly mixed.

3. To make the sauce, mix the soy sauce, vinegar, and chili powder together in another small bowl until well combined.

4. Heat oil in a pan. Then scoop about 1 tablespoon of the mixed enoki mushroom batter and fry it in the hot oil. After frying for about 2-3 minutes, flip it over to the other side and fry for another 2 minutes.

Continue frying until all the batter is used up.

5. Once everything is fried, you'll have delicious fried enoki mushroom pancakes. You can enjoy them by dipping them in the sauce prepared earlier for extra flavor.
