Ingredients
- 14 oz enoki mushrooms
- 2 tablespoons oil
- 2 cloves garlic (finely sliced) and 1 stalk spring onion (finely sliced)
- 3 tablespoons light soy sauce
- 1/2 teaspoon sugar
Step-by-step instructions
1. Cut off about one inch from the roots of the enoki mushrooms. Then, using your fingers, separate the bunch of mushrooms into smaller clusters of about three or four strands each. After that, wash them thoroughly with water until clean.
2. Boil water in a pot. Once the water is boiling vigorously, add the mushrooms and cook for about one minute. After one minute, scoop the mushrooms out into a plate.
3. Heat a small pot and add the oil. Once the oil is hot, add the garlic and fry for about 10 seconds. Then add the light soy sauce, sugar, and spring onion, and heat until the oil starts to bubble.
4. Then pour the hot pickled onion sauce over the mushrooms. Mix well until evenly combined, and you'll have a delicious Pickled Onion Enoki Mushroom Salad. It can be enjoyed deliciously together with rice.
