Step-by-step instructions
1. When caramelizing the sugar, choose a thick-bottomed pan to avoid scorching. Put the sugar and water into the pan and let it caramelize. You don't need to stir it with a spoon, but you should swirl the pan by its handle.
Once the sugar syrup turns amber in color, you can remove it from the heat.
2. Quickly pour the resulting sugar syrup into a small heat-resistant bowl that you have prepared beforehand.
Since the sugar syrup will harden once it cools down, you need to work quickly.
3. Add water to the steamer pot and start heating it.
In a bowl, beat the egg yolks.
4. Add the condensed milk and fresh milk to the beaten egg yolks and mix well. Then add a little salt and stir gently again. (Avoid stirring roughly to prevent bubbles from forming.)
5. Pour the egg-milk mixture evenly into the bowl with the sugar syrup you prepared earlier.
6. Then, place it in the steamer pot and steam for 20 to 40 minutes.
7. Once the time is up, you'll have delicious Filipino-style egg custard (leche flan).
