Ingredients

  • 4 tablespoons oil
  • 2 potatoes (peeled and cut into quarters)
  • 2 carrots (peeled and cut into square chunks)
  • Half red and half green bell peppers (seeds removed, cut into square pieces)
  • 1 onion (peeled and thinly sliced)

  • 3 cloves garlic (peeled and thinly sliced)
  • 1 thumb-sized piece of ginger (peeled and cut into thin strips)
  • 3 pounds chicken (cut into medium-sized pieces)
  • 1 tablespoon fish sauce
  • 16 tablespoons coconut milk

  • 16 tablespoons water
  • Salt and pepper, to taste

Step-by-step instructions

1. Heat a pot and add the oil. Once the oil is hot, add the potatoes and fry for about 2-3 minutes. Then transfer them to a plate.

2. In the same pot, add the carrots and fry for about 2 minutes. Then transfer them to a plate.

3. Next, add the bell peppers and fry for about 40 seconds. Then remove them from the pot.

4. Again, add the onion, garlic, and ginger, and sauté until fragrant. Then add the chicken and stir-fry until it turns brown. After that, add the fish sauce and stir for about 1 minute.

5. Next, pour in the coconut milk and water, and bring to a boil. After about 30 minutes, once the chicken is cooked, add the potatoes and carrots and simmer for about 5 minutes.

6. Then add the salt and pepper, and simmer until the sauce thickens. Just before taking it off the stove, add the bell peppers and simmer for about 1 minute. (You can also add other preferred herbs and spices at this stage.)

Once all these steps are complete, you'll have a delicious Filipino-style chicken stew ready to enjoy.
