Ingredients
- Shrimp - 6 viss
- Lemongrass - 2 stalks (thinly sliced)
- Ginger - 1 small piece (thinly sliced)
- Chili peppers - 3 pieces (thinly sliced)
- Kaffir lime leaves - 3 leaves (thinly sliced)
- Oyster sauce - 1.5 tablespoons
- Tom Yum paste - 2 tablespoons
- Tomato paste - 8 tablespoons
- Egg - 1 piece
- Mayonnaise - 1.5 tablespoons
- Chili paste - 3 tablespoons
- Vinegar - 2 tablespoons
- Corn flour - 3 tablespoons
- Honey - 1 teaspoon and water - 4 tablespoons
- Sugar - 1 teaspoon, a pinch of salt and oil
Step-by-step Instructions
1. In a small bowl, add the oyster sauce, 1 egg, corn flour, and a pinch of salt, and mix well until combined.
Wash the shrimp clean and remove the legs. Then, marinate them in the oyster sauce mixture prepared earlier, mixing well, and let it sit for about 15 minutes.
2. Heat a pan/pot and add plenty of oil. Once the oil is hot, add the shrimp and fry until golden brown. Transfer the fried shrimp to a plate.
3. Heat another pan/pot and add 1 tablespoon of oil. Add the lemongrass, ginger, and chili pieces, and stir-fry until fragrant. Then add the Tom Yum paste, water, honey, chili sauce, vinegar, and tomato paste, and stir until well combined. Add a pinch of salt and taste to adjust the seasoning to a mild saltiness.
4. Next, add the fried shrimp into the sauce mixture and stir well until evenly combined.
5. Once everything is well combined, remove from the heat. Then add the mayonnaise and mix well. After that, sprinkle the kaffir lime leaves on top.
