Alright, let's fry up some crispy pork ribs for the holiday.

Ingredients

  • 500 grams pork ribs
  • Frying flour
  • Oil

For Marinating

  • 6 to 8 cloves of garlic
  • 4 pieces of thinly sliced ginger
  • 1 tablespoon light soy sauce
  • Half a teaspoon dark soy sauce

  • 1 tablespoon oyster sauce
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper

For the Sauce

  • 1 tablespoon light soy sauce
  • 1 tablespoon sesame oil
  • Half a tablespoon black vinegar
  • 1 teaspoon garlic (finely minced)
  • 1 teaspoon shallots (finely minced)
  • 1 teaspoon salt
  • 1 tablespoon chili
  • 1 tablespoon cumin powder

Method

Finely mince the garlic. Wash the pork ribs thoroughly until the blood is cleared.

Pat the pork ribs dry with tissue. Marinate with the marinating ingredients (listed above) for about 4 hours, or marinate in the fridge for about 1 night.

Before frying, mix the frying flour and coat the ribs thoroughly by kneading.

Fry the pork ribs. Fry until they turn golden brown. Remove and set aside for a while.

Add oil to a pot and re-fry for about 20 to 30 seconds. Be careful not to burn the garlic.
