For those who want a piping hot, tangy, and slightly spicy soup, I'd like to share this recipe for spicy pork rib soup.

Ingredients

  • 3 pounds of pork ribs (cut into medium-sized pieces)
  • 7 cups of water (a little over 1.5 liters)
  • 3 potatoes (peeled and cut into medium-sized pieces)
  • 6 bunches of mustard greens (washed)
  • 100 grams of bean sprouts (washed)

  • 2 chili peppers
  • 1 onion (peeled and cut in half)
  • 3 stalks of spring onion (thinly sliced) and 5 cloves of garlic (thinly sliced)
  • 1 piece of ginger (peeled and thinly sliced)
  • 1 teaspoon of ground black pepper

Seasonings for the soup

  • 3 tablespoons of chili powder and 1 tablespoon of crushed dried chili
  • 2 tablespoons of fermented soybean paste and 1 tablespoon of fish sauce
  • 2 tablespoons of rice wine
  • 1½ tablespoons of thinly sliced garlic, 1 teaspoon of ginger
  • 1 tablespoon of water and a small amount of ground black pepper

Step-by-step instructions

1. Soak the pork ribs in cold ice water for 1 hour. (Change the water every 15 minutes)

2. Put the pork ribs into a large pot. Then add water until the ribs are submerged, and cover with a lid. Boil over high heat for 10 minutes. Then take them out and rinse the ribs thoroughly with water until clean.

3. In another clean large pot, add the pork ribs, a little over 1.5 liters of water, along with the onion, spring onion, garlic, ginger, and ground black pepper, and simmer over low heat for about 30 minutes to 1 hour.

4. While the pork ribs are simmering, boil the potatoes. Also boil the mustard greens in hot water for about 1 to 2 minutes.

5. When the pot of ribs comes to a boil, take out the ribs. Then strain the broth through a sieve. You can discard the garlic, onion, and spring onion.

6. Pour the strained broth back into a clean pot. Add the ribs, potatoes, and mustard greens. Add chili powder, crushed dried chili, fermented soybean paste, rice wine, garlic, fish sauce, 1 tablespoon of water, and ground black pepper, and stir until well combined. Then simmer over medium heat for about 10 minutes.

7. Once the set time is up, reduce the heat. Add the bean sprouts and chili peppers, and simmer for about 1 to 2 minutes. Add sesame seeds if you like. You can also add other leafy greens.

Once everything is done, you'll have a delicious, slightly spicy pork rib soup.
