Hello everyone! This time, for all the vegetable fry lovers, I'd like to share a recipe for crispy fried eggplant that will make your relatives forget everything else.
Ingredients
- 1 eggplant
- 2 stalks spring onion (thinly sliced)
- 1/2 teaspoon salt
- A little oil
Ingredients needed to make the batter
- 96 grams wheat flour
- 125 milliliters water
- 2 tablespoons corn flour
- 2 eggs
Ingredients needed to make the sauce
- 3 tablespoons sugar
- 2 tablespoons water
- 1 tablespoon rice vinegar
- 1 tablespoon oyster sauce
- 1 tablespoon Ketchup
Step-by-step method
1. Peel the eggplant and cut it into fairly long slices. Then rub with salt and leave it to sit for about 10 minutes. After 10 minutes, drain off the liquid from the bowl.
2. To make the sauce, first slice the spring onion thinly. Then mix thoroughly with sugar, water, rice vinegar, oyster sauce, and Ketchup.
3. To make the batter, put the wheat flour, corn flour, water, and eggs into a large bowl and stir until well combined.
4. Dip the eggplant slices into the batter and coat them.
5. Heat a pot and add oil. When the oil is hot, add the eggplant slices and fry for about 2 minutes. Then remove them onto a plate.
6. Put the eggplant slices back into the hot oil and fry on high heat for about 30 seconds. Then place them on oil-absorbing paper to drain off the excess oil.
7. In another pot, add the sauce mixed in step (3) and let it simmer for about 3 minutes. When the sauce has thickened, add the fried eggplant and stir-fry for a few minutes.
8. Transfer the finished fried eggplant onto a plate, sprinkle some spring onion on top, and enjoy it deliciously.
