Ginger is a medicinal food that relieves bloating and flatulence and is especially good for the stomach. It's commonly used to infuse oil with fragrance whenever preparing dishes.

This time, instead of just infusing oil with ginger, I'd like to share a healthy chicken stir-fry recipe made with a generous amount of ginger mixed in.

Ingredients

  • 450 grams chicken (cut into 1-inch cubes)
  • 1 tablespoon cooking wine
  • 1½ teaspoons dark soy sauce and 1 teaspoon light soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon oyster sauce

  • ½ teaspoon rice vinegar
  • 1 teaspoon sugar
  • A pinch of ground pepper and 1 tablespoon peanut oil
  • 1 piece of ginger, about 2 inches long (thinly sliced lengthwise)
  • 1 chili pepper and 1 red bell pepper (thinly sliced)

Step-by-step Instructions

1. Place the chicken pieces into a bowl and mix well with the cooking wine, 1 teaspoon of dark soy sauce, and 1 tablespoon of cornstarch until evenly coated. Then let it marinate for about 10 to 15 minutes.

2. In a small bowl, combine the oyster sauce, 1 teaspoon light soy sauce, ½ teaspoon dark soy sauce, ½ teaspoon rice vinegar, 1 teaspoon sugar, and a pinch of ground pepper, and mix well to make the sauce.

3. Heat the pan and add the oil. Once the oil is hot, add the chicken and stir-fry. When one side of each piece turns golden brown, flip each piece to the other side. Then add the ginger and stir-fry together.

4. Next, pour in the well-mixed sauce from step (2) into the pan and stir-fry for about 30 seconds.

5. Finally, add the chili pepper and bell pepper, and stir-fry evenly for another 30 seconds.

Once all these steps are complete, you'll have a wonderfully fragrant ginger chicken stir-fry ready to enjoy.
