For those who are tired of eating plain scrambled eggs, I'd like to share this recipe for scrambled eggs stir-fried with long beans and shrimp.
Ingredients
- 8 shrimp (peeled and washed until clean)
- 4 eggs
- 1 tablespoon dried shrimp
- 4 long beans (thinly sliced)
- 1 chili (thinly sliced)
- 1 clove garlic (thinly sliced)
- 2 tablespoons cooking oil
- 1 tablespoon fish sauce
- Salt and pepper to taste
Step-by-step instructions
1. In a bowl, beat the 4 eggs together with half a teaspoon of pepper and half a teaspoon of salt.
2. Heat a pot and add 2 tablespoons of oil. Once the oil is hot, add the garlic, chili, and dried shrimp, and sauté until fragrant.
3. Once fragrant, add the shrimp, long beans, 1 tablespoon of fish sauce, and a little pepper, then stir-fry for about 2 minutes.
4. Once the shrimp turn pink, pour in the beaten eggs and stir-fry.
Once the bottom of the egg turns golden brown, flip to the other side and continue frying for about 1 more minute.
Once all these steps are complete, you'll have a fragrant and delicious shrimp scrambled egg dish.
