Ingredients
• Minced pork - 0.5 viss (pound)
• Long beans (yard-long beans) - about 1 viss (cut into 1-inch lengths)
• Tofu or bean curd - 0.5 viss (cut into 1-inch cubes)
• Chili pepper - 1 piece (finely diced)
• Fish sauce and cooking wine - 1 tablespoon each
• Garlic - 3 cloves and spring onions - 2 stalks (thinly sliced)
• Sugar and cornstarch - 1/2 teaspoon each
• Oil for frying tofu or bean curd - 1 teaspoon
• A pinch of salt
Step-by-Step Instructions
1. Mix the minced pork thoroughly with fish sauce, cooking wine, sugar, and cornstarch until well combined. Then let it marinate for about 10 minutes.
2. Heat a pan, add oil, and fry the tofu or bean curd for about 10 minutes. Once the tofu or bean curd turns golden brown, transfer it to a plate.
3. Next, fry the minced pork in the same pan for about 5 minutes. Then remove it and set it aside on another plate.
4. In the same pan, add the garlic and spring onions, and sauté for about 10 minutes until fragrant.
5. Add the long beans and chili pepper, and fry for about 8 minutes.
6. Then add the previously fried pork and tofu (or bean curd) and mix together with the long beans. Add salt and fish sauce, and taste for seasoning, adjusting lightly for saltiness. Continue frying for another 1 to 2 minutes.
Afterward, transfer to a serving plate, garnish with cilantro, and enjoy this delicious dish.
