Ingredients
- 250 grams of long beans (trim off the ripe tips)
- 1 tablespoon of peanut butter
- 1 teaspoon of light soy sauce
- 1 teaspoon of vinegar
- 1 and a half tablespoons of chili powder
- Half a teaspoon of good chili powder (paprika)
- 1 star anise flower
- 1 tablespoon of sesame seeds
- 4 tablespoons of peanut oil (or vegetable oil)
- 4 cloves of garlic (finely sliced)
Step-by-step instructions
1. Bring water to a boil in a pot. Then add the long beans and boil until cooked. Once done, remove them from the pot and rinse again with cold water.
2. In a small bowl, add the peanut butter, light soy sauce, and vinegar, and mix well.
3. In another bowl, add the chili powder, good chili powder (paprika), star anise, and sesame oil, and mix well. Heat a pan and add 4 tablespoons of peanut oil. When the oil starts to boil, pour it into the bowl with the chili powder from earlier. The hot oil will cook the aromatics in the seasoning mixture.
Once the bubbles on the surface of the oil have disappeared, stir gently with a spoon.
4. Cut the long beans into bite-sized pieces and place them on a plate. Then pour the peanut butter mixture prepared in step (2) over the plate. From the top, pour the chili oil mixture prepared earlier, one teaspoon at a time.
After mixing well, you'll have a delicious spicy long bean salad. You can enjoy it deliciously together with rice.
