When you can't manage a full meal or when you're feeling unwell, rice porridge is the best food to help restore your strength.
For those who love rice porridge, as well as those who can't eat rice for various reasons and have to rely on porridge instead, we're sharing a recipe for a tasty and nutritious golden pumpkin rice porridge.
Ingredients
- 1 small golden pumpkin
- 1 milk-tin can of glutinous rice (soaked in water for about 1 hour)
- 1/2 teaspoon salt
- 2 tablespoons brown sugar
Step-by-Step Instructions
1. Cut the golden pumpkin into about 3-4 pieces and remove the seeds inside. Then place it into a large pot. Add 6 cups of water and boil over high heat for about 25 to 30 minutes.
When the set time is up, poke the pumpkin pieces with a fork to check if they're soft. Once they're soft, drain the water and let it cool.
2. Once the pumpkin has cooled, gently scoop out the flesh with a spoon.
3. Put the scooped-out pumpkin flesh back into the pot and mash it with a fork.
4. Next, blend the soaked glutinous rice with 250 ml of water in a blender until smooth.
5. Pour the blended glutinous rice liquid into the pot with the pumpkin. Add 750 ml of water and mix well until smooth. Then cover with a lid and cook over high heat until the mixture thickens.
Once the mixture has thickened, lower the heat and continue cooking for another 20 minutes or so. Add the salt and sugar, taste for a mild seasoning, and cook for another 3 to 4 minutes.
And there you have it - a delicious golden pumpkin rice porridge. You can enjoy it deliciously by adding cooked red beans, kidney beans, or any type of beans you prefer.
