Let's try grilling chicken Thai style.
Ingredients
- 3 tablespoons fish sauce
- 2 tablespoons honey, plus an additional 4 tablespoons
- 1 tablespoon vegetable oil
- 1 teaspoon lime zest
- 3 tablespoons lime juice (from 2 limes)
- 4 cloves garlic (peeled and finely sliced)
- 1½ inches ginger (peeled and finely sliced)
- 1½ tablespoons Sriracha Hot Sauce
- 1¼ teaspoons salt
- Over 1,000 grams boneless chicken leg meat
- 2 tablespoons cilantro
Half a lime, sliced (for garnish)
Method
In a blender, add the fish sauce, honey, oil, lime zest, lime juice, garlic, ginger, Sriracha, and salt.
Blend thoroughly until well combined. Pour about half a cup of this marinade into a bowl, cover it, and place it in the refrigerator.
Put the chicken and the remaining marinade into a Ziplock bag and seal it tightly. Place the bag in a dish and refrigerate for about 6 hours.
Take the chicken out and thread it onto skewers for grilling. Grill over medium heat. Brush with a little vegetable oil through the openings.
Grilling usually takes about 15 minutes to cook through. Once cooked, warm up the marinade you set aside in the refrigerator and brush it onto the grilled chicken.
Top with a sprinkle of cilantro and garnish with a slice of lime.
