Let's fry up this easy and simple cashew nut chicken stir-fry.
Ingredients
- 1 boneless chicken breast
- 4 tablespoons corn starch + 4 tablespoons wheat flour
- 1/2 cup of cashew nuts
For marinating the chicken
- 1/4 teaspoon salt
- 1 teaspoon light soy sauce
- A little ground pepper
- 1 teaspoon corn starch
- 1 teaspoon sesame oil
Other ingredients
- 1/2 of an onion
- 1 sprig of coriander
- 12 pieces of dried chili
- 1 tablespoon peppercorn
- 1 inch piece of ginger
- 4 stalks spring onion
- 2 cloves garlic
- 1 tablespoon light soy sauce
- 1 teaspoon vinegar
- 1/4 teaspoon sugar
Directions
Cut the chicken into small cubes and marinate with salt, light soy sauce, ground pepper, sesame oil, and corn starch. Mix well and let it sit for about 15 minutes.
In a large bowl, mix the corn starch and wheat flour together. Coat the chicken pieces with the flour mixture. Once coated, let it rest for about 5 minutes.
Fry the cashew nuts over low heat until crispy.
Heat oil in a pan. Once the oil is hot, fry the chicken until golden brown.
Leave 1 tablespoon of oil in the pan and remove the rest of the oil. Fry the dried chilies over low heat. After about 30 seconds, once the chilies turn dark, add the peppercorn, ginger, garlic, and spring onion, and stir-fry. Add the thinly sliced onion and coriander, stir-fry for about 20 seconds, and add a little salt.
Add the fried chicken pieces back in, then add the light soy sauce, sugar, and vinegar. Mix well and turn off the heat. Mix in the cashew nuts.
