There probably isn't any dish as delicious as crispy fried catfish that's crunchy on the outside and tender on the inside. Besides being an international dish, it's also a dish that will always please your taste buds no matter when you eat it.

Ingredients
Catfish – 500 grams
Milk – 400 milliliters
Corn flour – 70 grams
Wheat flour – 70 grams
Lemon – 2 pieces
Coriander (finely chopped) – 2 tablespoons
Cooking oil
Preparation Method
1. Wash the catfish thoroughly until clean, and cut it into rounds about 1 centimeter thick. Put the resulting catfish rounds into a bowl, pour milk over them to soften, and let them sit for half an hour. The longer you leave them, the softer they become.
2. In a slightly deep bowl, mix together 70 grams of corn flour and 70 grams of plain wheat flour. Add a little salt and pepper to season. Mix in some grated lemon zest and 1 tablespoon of finely chopped coriander, knead it together, and set aside for a moment.
Squeeze the juice from the catfish, then add it into the flour mixture and knead thoroughly until well combined.
3. Heat plenty of oil in a large handled pot. Once the oil is hot, add the catfish rounds and fry for about 2 to 3 minutes. Flip them over and once they turn golden brown, remove them.
4. Once the oil has drained well, place them onto a plate, sprinkle a little salt, garnish with lemon wedges on the side, and enjoy it deliciously.
