• Two boiled eggs
• 2 mushrooms

• One packet of instant noodles
• 1 teaspoon of sesame oil and a little sesame seeds
• Vegetable stock (625 milliliters)
• 2 tablespoons of fish sauce
• A little mustard greens

Step-by-step instructions

1. Soak the mushrooms in water for about 20 minutes. Then slice them thinly.

2. Heat a pot and add about 1 tablespoon of oil. When the oil is hot, add the ginger and garlic, and stir-fry for about 30 seconds. When the ginger and garlic become fragrant, add the mushrooms and vegetable stock, cover the pot, and let it come to a boil.

3. Once the vegetable stock is boiling, lower the heat and let it simmer for about 10 minutes more. After 10 minutes, open the lid and add the fish sauce and dried noodles. Let it cook for about 3 to 4 minutes so the noodles soften.
4. Once the noodles have softened, add the mustard greens and let it cook for another 2 minutes.

5. Add the sesame oil and spring onions into the pot and stir evenly.

6. Pour the finished noodle soup into a bowl and drizzle a little sesame oil on top.

7. Peel the boiled egg, cut it in half, and add it into the noodle soup.
