Hello everyone! This time, the recipe I'd like to share is a mixed vegetable and chicken stir-fry made with vegetables such as carrots, cilantro, green cauliflower, and red chili peppers, stir-fried together with chicken.

Ingredients

  • 1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
  • 5 tablespoons cornstarch and 1/2 teaspoon black pepper powder
  • 2 tablespoons sesame oil
  • 2 carrots (thinly sliced)
  • 1 stalk cilantro (cut into half-inch lengths)

  • Red bell pepper (thinly sliced) and 6 green chilies
  • 1/2 onion (thinly sliced)
  • 1 head green cauliflower (cut into bite-sized pieces)
  • 1 tablespoon each of thinly sliced ginger and garlic
  • 4 tablespoons peanuts (finely chopped with a knife)

Ingredients needed to make the sauce

  • 4 tablespoons soy sauce and 2 tablespoons oyster sauce
  • 1/2 tablespoon chicken stock
  • 1 tablespoon honey and 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 teaspoons chili sauce

Step-by-step instructions

1. Coat the chicken pieces evenly with cornstarch and pepper powder. Heat a pan, add sesame oil, and once the oil is hot, add the chicken pieces and stir-fry. Once the chicken pieces turn golden brown, transfer them to a plate.

2. Next, stir-fry the vegetables. (Add a little more sesame oil if needed)

Add the carrots, cilantro, red bell pepper, green cauliflower, onion, and green chilies to the pan and mix well. Stir-fry for about 4 to 5 minutes.

3. In a small bowl, mix all the sauce ingredients together thoroughly.

4. Add the garlic and ginger to the vegetable pan and stir-fry for about 30 seconds. Then pour in the sauce mixed earlier and stir-fry until the sauce thickens.

5. Then return the chicken pieces to the pan and mix well. Just before removing from the heat, add the peanuts and stir-fry.

And finally, you have a delicious plate of mixed vegetable and chicken stir-fry ready to enjoy.
