Ingredients
- 2 cloves garlic
- 1 piece of ginger, about 1 inch in diameter
- 1 teaspoon salt
- 1/2 tablespoon light soy sauce
- 1/2 teaspoon dark soy sauce
- 1 lb pork belly
- 10 chili peppers (pods)
- 1 tablespoon cooking wine
- 2 stalks spring onion (cut into about 5 cm lengths)
- 1/2 tablespoon cooking oil
Step-by-step instructions
1. Cut the chili peppers into pieces about 5 cm long each. Sprinkle about 1 teaspoon of salt over the chilies and let them sit for about 15 minutes. After 15 minutes, drain off the water.
2. Slice the pork belly thinly.
3. Heat the pan, add the chili peppers, and stir-fry for about 2 minutes. Once the chilies have softened, scoop them out into a small bowl.
4. Add 1/2 tablespoon of oil to the pan, and once the oil is hot, add the pork and stir-fry. Once the pork turns brown, add the ginger and garlic, and fry until fragrant.
5. Next, add the fried chilies back in with the pork and stir-fry together. Add the soy sauce and cooking wine, and continue stir-frying until the liquid reduces.
Once all these steps are completed, you'll have a delicious spicy fried pork belly. Just before serving, add a little spring onion, and you can enjoy it together with rice.
