Ingredients
- About 30 chicken wings
- Oil for frying
- 4 tablespoons yogurt
- 2 teaspoons chili powder
- Half a teaspoon masala
- 1 teaspoon thinly sliced ginger and 2 teaspoons thinly sliced garlic
- 1/4 teaspoon good quality chili powder (ngayoke kaung mhone)
- Half a lemon (squeezed for juice)
- 8 tablespoons wheat flour and 16 tablespoons corn flour
Ingredients needed to make the sauce
- 2 tablespoons oil
- 1 sprig curry leaves (about 20 leaves)
- 1 teaspoon thinly sliced ginger
- 1 tablespoon thinly sliced ginger
- 1 teaspoon chili powder and 2 tablespoons dried chilies
- 1 tablespoon Ketchup
- 2 tablespoons water
Step-by-step method
1. In a large bowl, mix together the yogurt, chili powder, masala, ginger, garlic, good chili powder, and lemon juice until well combined. Then add the chicken wings and rub them well with the mixture.
Then cover it and refrigerate for at least 2 hours, or up to overnight.
2. Once the marinating time is up, mix the wheat flour and corn flour together well. Then coat the chicken pieces with the flour mixture. After that, place the chicken pieces on a tray lined with a strainer, making sure they don't touch each other.
3. Next, heat a pot and add oil. Once the oil is hot, fry the chicken pieces for about 10 minutes. Once all the chicken pieces are fried, drain the oil using the tray from before. Then transfer them to a plate.
4. In another pot, add 2 tablespoons of oil. Once the oil is hot, add the curry leaves and fry. After about a minute, add the onions, garlic, chili powder, dried chilies, and Ketchup, then stir for about 2 minutes. In the final step, add 2 tablespoons of water and stir well again.
5. Pour the resulting tangy sauce over the chicken pieces.
