Boiled noodles aren't exactly health-friendly to eat, but the writer likes them, so I do eat them once in a while.
I made boiled noodles by adding a bit of kimchi to them.
The tangy and spicy flavor of kimchi pairs perfectly with the Korean noodles.
Ingredients (for 2 people)
2 eggs
Water
A little chicken
2 packs of Korean noodles
1 small soup bowl of kimchi
2 tablespoons of Korean red pepper paste (Gochujang)
A little mushroom
1 teaspoon of sesame oil
A little salt
2 tablespoons of finely sliced spring onions
Method
For two people, put about 2 and a half soup bowls of water into a pot and bring it to a boil.
Reduce the heat, and gently add the eggs one by one into the water, being careful not to break the yolks. Let them cook for about 4 to 5 minutes.
Remove the eggs using a strainer and set them aside.
Add the small pieces of chicken into the same water. Bring it to a boil. Add one full bowl of kimchi, including its liquid. Add the Korean red pepper paste and the noodles. When the noodles are about half cooked, add a little mushroom and sesame oil. Add a little salt.
When the noodles are cooked, scoop them out and put them into 2 bowls. Pour in the broth, and top with the eggs and spring onions.
