Hello everyone! Red meats like beef are rich in protein, and also contain abundant iron, zinc, and other vitamins and minerals.

When this nutritious meat is cooked together with potatoes and carrots, its nutritional value increases even further. So, I'd like to share a recipe for a Japanese-style beef and potato stew that's nourishing for the body.

Ingredients

  • 2 tablespoons peanut oil
  • 1 pound beef (cut into medium-sized pieces)
  • 1 large onion (thinly sliced)
  • 2 cloves garlic (thinly sliced)
  • 1 tablespoon thinly sliced ginger

  • 3 tablespoons flour
  • 2 carrots and 1 potato (peeled and cut into medium-sized chunks)
  • 2 tablespoons tomato paste
  • 2 tablespoons soy sauce
  • 4 cups (about 1 liter) water and 450 ml red wine

Step-by-step Instructions

1. Heat a large pot over the highest heat setting, add 1 tablespoon of peanut oil along with the beef, and fry for about 5 minutes. Once the beef is cooked, transfer it to a plate.

2. Lower the heat to medium, add the remaining 1 tablespoon of peanut oil to the pot, add the onions, and fry for about 10 minutes. Add the ginger and garlic and stir for about 2 minutes. Add the flour and stir for another minute.

3. Next, add the carrot and potato chunks and stir until well combined. Add the tomato paste and stir, then add the red wine and wait until it comes to a boil.

4. Add the sugar, soy sauce, and water, and wait again until it comes to a boil.

5. Once it's boiling, add the beef pieces, reduce the heat to the lowest setting, cover the pot with a lid, and let it simmer for about 30 minutes.

6. When the time is up, open the lid, add salt and black pepper, and taste to adjust the seasoning to your liking.

And there you have it — a delicious Japanese-style beef stew that's perfect to enjoy with rice.
