If you have leftover rice from last night that hasn't spoiled and is still in good condition, everyone knows that instead of throwing it away, you can fry it up as fried rice for breakfast the next morning.

Among the many ways to make fried rice — such as American fried rice, Chinese fried rice, and Pershu fried rice — this time we'll be sharing a Japanese-style fried rice recipe.

Ingredients

  • 1 tablespoon vegetable oil
  • 2 cloves garlic (thinly sliced)
  • 1 stalk spring onion (thinly sliced)
  • 1 serving of rice
  • Lettuce leaves (cut into moderate pieces)

  • 1 small carrot (thinly sliced)
  • 2 eggs (beaten)
  • 1 tablespoon soy sauce
  • A little salt and black pepper

Method

1. Heat a pan over the highest heat, add the oil and garlic, and stir-fry for about 1 minute to release the aroma.

2. Add the spring onion and carrot, and stir-fry for another 3-4 minutes.

3. Add the rice and lettuce, and stir-fry thoroughly so that the rice and vegetables are evenly mixed together.

4. Push the rice to one side of the pan to create an empty space. Pour the beaten eggs into that empty space.

5. Once the eggs are partially cooked, mix them together with the rice.

6. Add the soy sauce and stir again. Then add salt and black pepper, and taste to adjust the seasoning to a light saltiness.

Then turn off the heat, transfer the fried rice onto a plate, and it's ready to be enjoyed deliciously.
