Ingredients

  • 2 tablespoons vegetable oil
  • 32 tablespoons kimchi and 3 tablespoons kimchi juice
  • 8 oz dried/cured pork (cut into 1-inch cube pieces)
  • 3 bowls of cooked rice
  • 1 teaspoon chili powder and 1 tablespoon chili flakes

  • 1 tablespoon sesame oil and 1 teaspoon sesame seeds
  • 2 stalks spring onion (thinly sliced)
  • 1 teaspoon sugar
  • 4 eggs (cooked as half-fried)

Step-by-step instructions

1. Heat a pan over high heat, then add 1 tablespoon of oil. Once the oil is hot, add the dried/cured pork and fry for about 4 minutes until it turns brown.

Transfer the fried pork onto a plate.

2. Pour the remaining oil back into the pan. Then add the kimchi, chili flakes, and chili powder, and stir-fry for about 3 to 4 minutes.

3. Next, add the rice into the pan and mix thoroughly with the kimchi until well combined.

4. Return the fried pork to the pan, and pour in the kimchi juice and sesame oil together. After frying until well mixed, taste for seasoning. If needed, you can add an extra half to one teaspoon of sugar.

Once all these steps are complete, you'll have a delicious Kimchi Korean Fried Rice.

Transfer to a plate and serve hot together with a half-fried egg for a delicious meal.
