Ingredients

Ingredients needed for the meat

  • Pork belly 180 grams
  • Cooking white wine 1 tablespoon
  • Ground black pepper, a little

Kimchi and other soup ingredients

  • Kimchi fermented for about 2 to 3 weeks
  • 1 onion (thinly sliced)
  • 1 stalk of spring onion (thinly sliced)
  • 5 grams of mushroom (thinly sliced)
  • 150 grams of tofu (cut into 1 cm thick rectangular blocks)

  • Water 250 milliliters
  • Chili powder, about 1 tablespoon
  • Fish sauce 1 tablespoon
  • Chili paste 1 teaspoon
  • Thinly sliced garlic, about 1/4 teaspoon

Step-by-step instructions

1. Cut the pork into medium-sized pieces, then add the white wine and black pepper, mix well, and let it marinate for about 15 minutes so the flavors can soak into the meat.

2. Heat a pot and stir-fry the kimchi until it softens.

3. In another pot, add the pork, then add the kimchi, mushroom, onion, tofu, and all the soup ingredients into the pot. (Set aside the spring onion, as it should only be added just before taking the pot off the stove.)

4. Add water and let it simmer for about 10 to 15 minutes until the meat becomes tender. Once the meat is tender and fully cooked, turn off the heat and add the spring onions.

Now you can enjoy this delicious spicy kimchi tofu soup together with rice.
