Ingredients

  • 1 lb pork collar (thinly sliced)
  • 3 cloves garlic (finely minced)
  • 1 tablespoon thinly sliced ginger
  • 4 tablespoons fish sauce
  • 1 tablespoon chili powder

  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar
  • 2 tablespoons cooking oil
  • 2 stalks spring onion (thinly sliced)

Step-by-step instructions

1. In a small bowl, combine the ginger, garlic, fish sauce, chili powder, sesame oil, and sugar, and mix well until evenly blended. Then place the pork pieces into a sealable ziplock bag along with the fish sauce mixture. Seal the bag tightly and shake to combine.

You can marinate the pork for 30 minutes up to 8 hours. If marinating for a longer time, keep it in the refrigerator.

2. Heat a pan and add 1 tablespoon of cooking oil. Once the oil is hot, add the pork slices and fry for about 3 minutes. Then flip to the other side and fry for another 3 minutes.

Once the pork turns golden brown, transfer it to a plate.

3. Add the remaining cooking oil to the pan, and continue frying the rest of the pork in the same way as described above. If you don't want to waste the leftover marinade sauce, you can add it in while frying the pork as well.

4. Once everything is fried, you'll have a delicious dish of fried pork collar. Sprinkle a little spring onion on top, and enjoy it deliciously with rice.
