When eating rice, having it with a hot, spicy sour soup truly makes you eat twice as much as usual.
This time, to make your rice taste even better, the sour soup we're sharing is a spicy beef rib soup cooked with beef ribs.
Ingredients
- 1 viss of beef ribs
- 5 oz carrots (thinly sliced)
- 1 stalk leek (thinly sliced)
- 1 red fresh chili and 1 green fresh chili (thinly sliced)
- 4 cloves garlic (finely sliced)
- 1 small onion (thinly sliced)
- 2 tablespoons soybean paste
- 1 tablespoon chili paste
- 2 teaspoons chili powder
- A small amount of watercress for fragrance (you may substitute with another type of leafy soup vegetable)
Step-by-step instructions
1. After washing the beef ribs thoroughly, cut off the shank and feet portions, then also cut the main meat into medium-sized chunks.
2. Pour 3½ cups of water (about 875 ml) into a pot, add the thinly sliced carrots, soybean paste, and chili paste, stir until well mixed, then cover and bring to a boil for about 20 minutes.
3. Once 20 minutes have passed, add the onion, garlic, thinly sliced chili, leek, and beef ribs, cover, and let it cook for another 15 minutes or so.
4. After 15 minutes, the beef ribs should be cooked through, so add the chili powder and gently stir with a spoon. (If you can't eat spicy food, you can skip the chili powder.)
5. Once you've tasted it and adjusted the saltiness to your liking, cover with a bit of watercress and remove from the stove — it's ready to serve.
