2. Once it comes to a boil, reduce the heat to the lowest setting and let it simmer for about 15 to 20 minutes, until the potatoes become soft and tender.

To thicken the soy sauce, remove the pot's lid and let it simmer for about 4 to 5 minutes until the sauce reduces.
