Hello everyone! For those who enjoy their rice meal with a nice bowl of soup on the side, this time I'd like to share how to make Korean style pork and potato soup.
Ingredients
- 3 to 4 slices of pork belly (cut into large chunks)
- 1 potato (peeled and thinly sliced)
- Half a cucumber (thinly sliced)
- 4 to 5 shallots (cut into small cube shapes)
- 3 slices of ginger
- 2 tablespoons of Korean soybean paste
- 2 cloves of garlic (thinly sliced)
- 2 stalks of spring onion (thinly sliced)
- 1/4 teaspoon of sugar
- A little sesame oil
Step-by-step instructions
1. Heat a pot and fry the pork slices for about 3 to 4 minutes. Once the pork turns brown, transfer it to a plate.
2. Without adding oil, fry the potato, shallots, and cucumber for about 4 to 5 minutes.
3. Once the potatoes have softened, add the ginger and garlic, stir well, then pour in 250 ml of water and stir evenly.
4. When the water starts boiling, add the soybean paste and sugar, and stir well.
5. Lower the heat and let it simmer uncovered for about 10 minutes. Stir occasionally as needed.
6. After 10 minutes, add the fried pork back in and let it simmer for another 2 to 3 minutes.
7. Once all these steps are complete, remove the pot from the heat and transfer the soup into a serving bowl.
8. Drizzle with a little sesame oil and sprinkle with spring onion, then enjoy deliciously with rice.
