With just one or two packs of mustard greens, you can make delicious spicy pickled mustard greens at home by yourself.
Ingredients
- 2.5 liters of water
- 2 packs of mustard greens (cut into pieces about two inches long)
- 16 tablespoons of salt
- 1 tablespoon of finely sliced garlic
- 1 tablespoon of finely sliced ginger
- 8 tablespoons of chili powder
- 2 tablespoons of sugar
- 5 stalks of spring onion (cut into half-inch lengths)
- A little fish sauce (optional)
Step-by-step instructions
1. In a large bowl, add 2.5 liters of water and 16 tablespoons of salt.
2. Add the thinly sliced mustard green leaves into the salted water and soak for about 5 to 6 hours. If needed, press down with a large plate to keep the leaves fully submerged in the water.
3. Once the set time is up, remove the mustard greens and rinse them with cold water. After rinsing, squeeze out the water completely.
4. In another large bowl, mix together the garlic, ginger, chili powder, sugar, and spring onion until well combined.
5. Next, add the mustard greens into the bowl and knead them together with the chili mixture until well combined.
6. Once kneaded, place the mustard greens into a clean, dry, airtight glass jar, seal the lid, and store in a cool place or in the refrigerator for about two to three days.
7. After two or three days, you'll have delicious, tangy and spicy pickled mustard greens ready to enjoy.
