Ingredients
- 1 oz cabbage (thinly sliced)
- 1 oz onion (thinly sliced)
- 1 oz carrot (cut into thin strips)
- 1 stalk spring onion (finely chopped)
- 2 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper powder
- 5 tablespoons butter
- 4 slices bread
- 3 tablespoons sugar
- 2 slices bacon
- 2 slices American cheese
- Tomato ketchup
- A little mayonnaise
Step-by-step instructions
1. In a large bowl, add the cabbage, onion, carrot, eggs, spring onion, salt, and black pepper, and mix well until evenly combined.
2. Spread butter on both sides of the 4 slices of bread.
3. Heat a pan, add 2 tablespoons of butter, and wait until it melts. Once the butter has melted, pour the mixed vegetable and egg mixture into the pan and spread it into a square shape. After frying for about 2–3 minutes, cut it in half right down the middle. Then flip it over to the other side and fry for another 2–3 minutes.
4. Once the vegetable egg scramble is ready, scoop it onto a plate, then add the 2 slices of bacon into the pan and fry them.
5. Once the bacon is cooked, add the buttered bread slices and fry them until golden brown.
6. Then, while the bread slices are still warm, sprinkle a little sugar on top. Then add one portion of the vegetable egg scramble. Add the bacon. Add the American cheese slice. Drizzle ketchup and mayonnaise over the cheese. Top with another slice of bread, and it's complete.
Cut the finished vegetable egg scramble cheese sandwich evenly in half right down the middle. You can enjoy this delicious sandwich together with a hot cup of coffee or warm milk.
