For Korean food lovers and those bored of the usual fried chicken or chicken curry, here's a recipe for Korean-style Tomato Chicken Stew that goes great with rice and tastes amazing eaten just as it is, which we're sharing with you.
Finely chop a small amount of chives. Also finely chop one large onion.
For tomatoes, cut 8 small cherry tomatoes in half. If you don't have cherry tomatoes, you can use regular tomatoes instead.
Cut 2 chicken breasts into small pieces and mince them finely.
Once minced, add the chopped chives and onion, then add salt – a little, chili powder – a little, ginger powder – a little, and flour – 1 tablespoon, and knead well together.
Once kneaded, shape into balls of a moderate size using your hands.
Add a little oil to a pot and fry the shaped balls. You don't need to fry them until very crispy — just fry them lightly, as shown in the picture. Once fried, remove them and place on a plate.
Add 1 tablespoon of butter to the pot, and once the butter has melted, add 1 clove of finely chopped garlic and stir.
Add 12 tablespoons of tomato spaghetti sauce. Add 100 milliliters of water and stir.
Once it starts to simmer a little, add the fried chicken balls. Add the sliced tomatoes. Stir well, cover with a lid, and let it cook for about 2 minutes.
Once the time is up, take out the chicken balls first and place them on a plate. Then pour the sauce over the top. Finally, garnish with some fresh coriander leaves on top and it's ready to eat. And there you have it — a delicious Korean-style Tomato Chicken Stew.
