Ingredients

  • 1 pound chicken (bones and skin removed)
  • 1 teaspoon cornstarch
  • 2 tablespoons fish sauce
  • 1 tablespoon cooking wine and 1 tablespoon rice wine
  • 1 tablespoon vinegar

  • 1 tablespoon sugar and 2 tablespoons water
  • 1 teaspoon sesame oil and 2 tablespoons cooking oil
  • 1 teaspoon thinly sliced garlic and 1 teaspoon thinly sliced ginger
  • 2 stalks garlic (thinly sliced)

  • 1/3 bowl of Chinese celery (thinly sliced)
  • 10 red chilies and half a bowl of thinly sliced dried chilies
  • Half a bowl of peanuts

Step-by-step instructions

1. Cut the chicken into bite-sized pieces, put them into a bowl, add 1 teaspoon of cornstarch, fish sauce, and cooking wine, then mix well until evenly coated.

2. To make the sauce, combine the vinegar, rice wine, sugar, sesame oil, water, and 1 teaspoon of cornstarch, then stir well.

3. Heat a pan and add 1 tablespoon of oil. Then add half of the chicken and let it sit without stirring for about 1 minute. After that, stir for about 2 minutes. Remove the cooked chicken and set it aside in a bowl. Cook the remaining half of the chicken the same way.

4. After frying the chicken, some oil will remain in the pan. Add another tablespoon of oil. Add the garlic, ginger, spring onion, and dried chilies, and stir-fry for about 1 minute.

Then add the red chilies and Chinese celery, and stir-fry for about 1 minute. After that, add the chicken, peanuts, and the sauce prepared in step (2), then stir for about 3 minutes.

Once the sauce has thickened to the right consistency, you can remove it from the heat.

And there you have it — a delicious Kung Pao chicken dish is ready to enjoy.
