I'd like to share a dish that the whole family can enjoy together on a holiday. The dish is fried pork balls garnished with watercress leaves.
Ingredients
- 8 grams ginger (finely sliced)
- 1 stalk spring onion (thinly sliced)
- 1 egg
- 3 tablespoons breadcrumbs
- 1 tablespoon cooking wine
- 1 pound (450 grams) minced pork
- 1 tablespoon light soy sauce and 1 tablespoon oyster sauce
- Half a teaspoon ground pepper, 1/4 teaspoon five-spice powder, and 1 and a half teaspoons cornstarch
- 60 milliliters water
- Vegetable oil for frying

- 1 tablespoon vegetable oil
- 2 slices ginger, 2 stalks thinly sliced spring onion, and a small amount of watercress leaves
- 10 grams sugar, 1 tablespoon cooking wine, 1 and a half tablespoons light soy sauce, 1/4 teaspoon dark soy sauce, and 1 tablespoon oyster sauce
- 375 milliliters water
Step-by-step instructions
1. Put the minced pork into a large bowl, then add the ginger, spring onion, egg, cooking wine, light soy sauce, oyster sauce, ground pepper, five-spice powder, cornstarch, and water, and mix well until evenly combined.
2. After kneading thoroughly for about 10 minutes, shape the mixture into round balls.
3. Heat a wok and add oil. Once the oil is hot, fry the pork balls for about 2 minutes. When the pork balls are cooked, remove them and set aside on a plate.
4. Heat the wok again and add 1 tablespoon of oil. Once the oil is hot, add the ginger and spring onion and stir-fry for about 1 minute. Then add 10 grams of sugar and stir until the sugar dissolves completely.
5. Add 1 tablespoon cooking wine, 1 and a half tablespoons light soy sauce, 1/4 teaspoon dark soy sauce, 1 tablespoon oyster sauce, and 375 milliliters of water into the pot, and stir until it comes to a boil.
6. Once it comes to a boil, add the fried pork balls and simmer on low heat for about 15 minutes. (Don't forget to turn the pork balls over to the other side after about 6 to 7 minutes.)
7. Once the liquid comes to a boil again, you can turn off the heat.
8. Arrange the boiled watercress leaves neatly in a large bowl. Place the fried pork balls on top of the watercress leaves in rows.
