Hello everyone! For those who love fried spring rolls, this time we'd like to share how to make mashed potato spring rolls filled with a variety of ingredients like cheese and pork.

Ingredients

  • 2 potatoes (peel, wash, and cut into small cubes)
  • 2 tablespoons butter
  • 5 tablespoons sour cream
  • 1 teaspoon thinly sliced garlic
  • 1/2 teaspoon salt

  • 2 tablespoons thinly sliced spring onion
  • 10 to 12 spring roll wrappers
  • A small amount of pork (thinly sliced and fried until crispy)
  • 3 oz cheese (cut into strips)
  • Oil for frying

Step-by-step instructions

1. Boil the potato cubes in boiling water until soft.

Take out the boiled potatoes and mash them until smooth. Then mix well with the mashed potato, butter, sour cream, garlic, spring onion, and salt.

2. Place about 2 to 3 tablespoons of the potato filling in the center of the spring roll wrapper. Then add a little cheese and a little fried pork, and roll it up.

When rolling the spring rolls, dab the edges of the wrapper with beaten egg (or plain water) before sealing.

3. Heat a pot and add oil. Once the oil is hot, add the spring rolls and fry for about 2 minutes until golden brown.

Take out the mashed potato spring rolls, let them cool, and enjoy them with your favorite dipping sauce.
