Ingredients
- Butter - 7 tablespoons
- Crushed biscuits - 28 tablespoons (crush biscuits or crackers into fine crumbs)
- Mango - 14 oz (peeled and thinly sliced)
- Water - 2 tablespoons
- Cream cheese - 8 oz
- Sugar - 16 tablespoons
- Eggs - 5
- Flour - 1 tablespoon
Step-by-Step Instructions
1. Preheat the oven to 350°F. Line the cake pan with oil-absorbing paper, then brush it with oil.
2. Next, melt the butter and mix it thoroughly with the crushed biscuits.
3. Pour the resulting biscuit-butter mixture into the pan and smooth the surface evenly. Then press it down gently using the bottom of a glass.
4. Put the mangoes into a blender and blend them. Then add 2 tablespoons of water and blend again. If you want the resulting mango puree to be sweeter, add 2 teaspoons of sugar.
5. Put the cream cheese into a large bowl. Add 16 tablespoons of sugar and mix with an electric mixer.
6. Crack the 5 eggs in one at a time. After adding each egg, mix once. Then crack in the next egg and mix again.
7. Next, add half of the mango puree to the cream cheese mixture, then add the flour and mix thoroughly.
8. Pour the resulting batter into the cake pan.
9. Add the remaining half of the mango puree drop by drop onto the pan, as shown in the picture.
10. Then, using a skewer or a thin knife, swirl it in a circular pattern.
Once done, bake it in the preheated oven for about 1 hour. If it's not fully cooked after 1 hour, bake for another 10 minutes.
Once everything is done, you'll have a delicious mango cheesecake ready to enjoy.
