- 12 potatoes
- 4 tablespoons olive oil
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 0.5 lb bacon (fry until crispy, then chop finely)
- 8 tablespoons cheese
- 4 tablespoons sour cream
- 2 stalks spring onions (thinly sliced)
Step-by-step instructions
1. Preheat the oven to 400°F. Coat the potatoes with 2 tablespoons of olive oil. Then place them in a baking tray and bake in the oven for about 40 to 45 minutes. Once the time is up, take them out and let them cool for about 10 minutes.
2. Heat the oven up to 450°F.
3. Once the potatoes have cooled, cut them in half and scoop out the flesh with a spoon. Leave about half an inch thickness of potato flesh remaining in the skin.
Mix the remaining 2 tablespoons of olive oil, 1/2 teaspoon of salt, and black pepper thoroughly. Then brush this mixture onto both the inside and outside of the potato skins.
4. Turn the potatoes upside down, place them back on the baking tray, and bake in the oven for about 10 minutes. Once the time is up, flip the potatoes over and bake for another 10 minutes.
5. Then, sprinkle the cheese and fried bacon bits into the potato skins, which now look like little cups. Bake in the oven for another 2 to 3 minutes, until the cheese has melted.
