Ingredients

  • About 1½ small bowls of bean sprouts
  • 1 lb chicken breast (or chicken leg meat), skin and bones removed
  • 2 tablespoons oyster sauce
  • ½ teaspoon sugar
  • 1 teaspoon cornstarch

  • 2 stalks spring onion (cut into about 1-inch lengths)
  • Half an onion
  • 1½ teaspoons thinly sliced garlic
  • ½ teaspoon chili powder
  • 3 tablespoons vegetable oil

Ingredients needed for the sauce

  • 1 tablespoon dark soy sauce and 4 teaspoons light soy sauce
  • 2 teaspoons vinegar
  • ½ teaspoon sugar
  • 2 tablespoons water (or chicken broth)
  • 2 teaspoons cornstarch mixed with 4 teaspoons water

Step-by-step instructions

1. Place the bean sprouts into boiling hot water for about 15 to 30 seconds.

2. Cut the chicken into small pieces, about 1 inch each. Then place them in a bowl and mix evenly with oyster sauce, sugar, and 1 teaspoon of cornstarch. Let it marinate for about 15 minutes.

3. While the chicken is marinating, mix the light and dark soy sauce, vinegar, sugar, and water (or chicken broth) evenly in a small bowl.

In another small bowl, mix 2 teaspoons of cornstarch with 4 teaspoons of water evenly.

4. Heat a wok over medium heat, then add 2 tablespoons of oil. Once the oil is hot, add the chicken pieces and stir-fry until they change color (about 80% cooked).

Then take the chicken out into a bowl and clean the wok.

5. Add 1 tablespoon of oil to the wok. Once the oil is hot, add the garlic, spring onion, and chili powder, and stir-fry for about 15 seconds.

Then add the fried chicken back into the wok and stir-fry evenly. Push the chicken to the side of the wok, and pour the soy sauce mixture prepared in step 3 and the cornstarch slurry into the center of the wok.

6. Once everything is mixed evenly, add the onion and stir-fry for a few minutes. Then add the bean sprouts and stir-fry for about one minute.

After tasting to check the seasoning for saltiness and lightness, your delicious Bean Sprout and Chicken Stir-fry is ready to serve.
