Dear readers, which vegetable do you like best? Some people love onions and garlic, and even eat them raw just like that.

But as for me, I'm a tomato lover, and whatever curry I cook, I always make sure to add tomatoes. This recipe is exactly perfect for that.

Alright, let's take a look at the recipe now.

Ingredients Needed

  • Olive oil – 1 tablespoon
  • Onion (finely sliced) – 1
  • Garlic (finely sliced) – 4 cloves
  • Tomato paste can – 28 oz can
  • Salt, black pepper
  • Eggs – 4
  • Coriander
  • Bread

Preparation Method

Heat oil in a medium-sized pan with a handle, and cook the onions and garlic until they soften.

Once softened, pour in the tomato paste.

Add salt and black pepper to taste.

Stir well, and if it looks too watery, let it simmer on medium heat for about 10 minutes. Since the tomato paste may bubble and splatter while cooking, cover it with a lid.

Once the tomato paste has thickened, make small wells in it and crack one egg into each well.

Lower the heat and cover with a lid so the eggs can cook through.

Once the egg whites are cooked, sprinkle coriander on top. Now you have a delicious curry ready.
