Ingredients
- Mustard greens 1 kilogram
- Peanut oil 1.5 tablespoons
- Dried chili pods 4 pods
- 1 inch piece of ginger (finely sliced)
- 1 clove of garlic (finely sliced)
- Spring onions 2 stalks (thinly sliced)
- Vinegar 2 tablespoons
- Soy sauce 2 tablespoons
- Sugar 2 teaspoons
- Corn starch 1 tablespoon
Step-by-step instructions
1. Thinly slice the mustard greens.
2. In a small bowl, mix together 2 tablespoons of vinegar, 2 tablespoons of soy sauce, 2 teaspoons of sugar, and 1 tablespoon of corn starch until well combined.
3. Heat the wok and add oil. When the oil is hot, add the dried chili pods. Once the chilies turn brown, add the ginger, garlic, and spring onions, and stir-fry for about 1 minute until fragrant.
4. Next, add the thinly sliced mustard greens and cook over high heat for about 30 seconds without stirring. Then stir-fry for about 2 minutes.
5. After that, pour the vinegar sauce mixture prepared in step (2) into the wok and stir-fry. Once the liquid has reduced, remove from heat and transfer to a serving plate.
And there you have it — a delicious plate of stir-fried greens.
