Ingredients
- 4 tablespoons of vegetable oil
- 2 shallots and 5 stalks of spring onion
- 2 teaspoons of corn flour
- 1/4 teaspoon of salt
- 1 teaspoon of shrimp paste
- 2 cloves of garlic (peeled and thinly sliced)
- Red chilies (thinly sliced)
- 2 tablespoons of soy sauce, 1 teaspoon of fish sauce, and 1 tablespoon of brown sugar
- 1 teaspoon of tamarind paste and 1 tablespoon of tomato paste
- 4 bowls of rice and 5 eggs
Step-by-step method
1. Heat the pan and add 1 tablespoon of oil.
2. Slice the shallots thinly into rings, then coat evenly with corn flour. Then add them into the hot oil and fry until they turn golden brown. Once done, transfer them into a bowl.
3. Add another tablespoon of oil into the pan. Once the oil is hot, add the shrimp paste, garlic, and red chilies, and stir-fry for about 1 minute. Then add the fish sauce, brown sugar, tamarind paste, and tomato paste and soy sauce, and stir for about 1 minute.
4. Next, add the rice and stir-fry evenly.
5. After stir-frying for about 5 minutes, push the rice to one side of the pan and crack one egg into the empty side. Then scramble the egg.
6. In the next step, mix the scrambled egg together with the fried rice and stir-fry. Then add the spring onions, a little salt, and fried shallots, and stir-fry.
After tasting to check the seasoning, turn off the heat.
7. In another large pan, add the remaining oil. Then crack in 4 eggs and fry them sunny-side up (Half-Fried).
8. Divide the fried rice from the pan equally onto four plates. Then top each with a half-fried egg. Drizzle a little chili sauce on top.
